I have a thick slab of wood I use as my kitchen cutting board. What’s the best way to sterilise it? Alcohol? Sunlight? Oven cleaner? Hot soapy water? Bleach?

Yes alcohol will do it. Spray some metho on, and after about 30s it’s been sterilised.
